Beer Caramelized Onion Burgers with Tarragon Honey Mustard

Have I mentioned how much I love burgers? It’s pretty apparent around here that both burgers and sandwiches are my go-to meals. Trying to come up with different combinations is one of my favorite things to do – even if I do rely on old standbys most of the time (I could have a pimento cheese burger every day of my life, honestly). This burger, with beer caramelized onions and tarragon honey mustard, was something I thought of while stumbling around online. I saw a blue cheese burger with tarragon mustard and was immediately drawn to it and knew I wanted to recreate.

The tarragon honey mustard has almost a floral, sweet note to it, and while tarragon is mostly associated with chicken dishes, it really played with the beefy burger quite well. I kept finding myself wanting to add even more of it on the burger as I was eating it – it was that good. And the beer caramelized onions added another layer of flavor – the beer was just subtle enough in the background that made you wonder what that flavor was. Everything combined together made for a fantastic burger, and I’m pretty sure the tarragon honey mustard is my new favorite condiment. It’s going on everything now.

Beer Caramelized Onion Burgers with Tarragon Honey Mustard

Ingredients

  • 2 Tbsp grain mustard
  • 1/3 cup mayonnaise
  • 1 Tbsp fresh tarragon, minced
  • 1 Tbsp honey
  • Salt and pepper
  • Olive oil
  • 1/2 onion, sliced thinly
  • 1/4 cup beer
  • 1/2 lb ground beef, formed into two patties
  • Cheese, for the burgers
  • 2 hamburger buns, toasted
  • Lettuce, for serving

Instructions

  1. Begin by making the tarragon honey mustard. In a small bowl, combine the mustard, mayonnaise, tarragon, and honey. Stir until well combined and season with salt and pepper. Place in an airtight container in the fridge until ready to serve.
  2. For the beer-caramelized onions, preheat a medium skillet over medium heat. Add the butter and let melt. Add the onions and cook until they just start to turn brown, about 5-10 minutes. Add in the beer and turn up the temperature to bring to a boil. Cook, on high, until the beer has completely evaporated. Turn down the heat and cook for another 5-10 minutes until caramelized. Season with salt and pepper.
  3. For the burgers, heat a skillet over medium high heat and place the burgers in. Cook until brown on the bottom, then flip. Continue cooking until it reaches desired temperature. Place the cheese on during the last 3 minutes of cooking to melt.
  4. To serve, take the hamburger buns and spread a generous amount of the tarragon honey mustard on both sides. Place the burger on top, followed by the onions and lettuce. Place the top bun on and repeat with remaining burger. Serve immediately.
