Plum Fizz

One of my favorite things to make and keep on hand are simple syrups because they’re one of the best way to pack tons of flavor into any drink (see examples 1 // 2 // 3 // 4). They really deliver a punch to cocktails, and a plum simple syrup is no exception. Plums are at their peak right now so preserving their flavor is the best way to keep them even after the season is over. And the best way to enjoy the syrup is mixing up a plum fizz.

It’s no surprise that I love a good cocktail, and my porch is absolutely made for relaxing with a cocktail and a good book. I had a few days off of work, so I was able to work on my porch and I couldn’t be more excited. It’s been pretty plain up there with only a couple of chairs, but I finally found the chairs I really wanted and since they were only available where my parents were, they were kind enough to bring them up to me. I am beyond excited to sit out on my porch with one of these plum fizzes and enjoy the sunshine and my new lime tree (a surprise from my parents!). Ingredients

  • 1 cup water
  • 1 1/2 cups sugar
  • 2 plums, quartered, plus more for garnish
  • Mint leaves, plus more for garnish
  • 2 oz gin
  • 1/2 lemon, juiced
  • Seltzer, to top

Instructions

  1. Begin by making the plum simple syrup. In a medium saucepan add the water, sugar, and plums. Bring just to a boil, stirring constantly until the sugar has dissolved. When the mixture comes to a boil, turn the heat off and stir and let sit for about 10 minutes to steep the plums. Strain into a jar and place in the fridge, covered, until ready to use.
  2. To make the cocktail, muddle a few leaves of mint in the bottom of a shaker. Fill with ice then top with gin, lemon juice, and 1 oz of the plum simple syrup. Shake well. Pour into a glass and top with seltzer and garnish with plums and more mint, if desired.
