Add me to the list of people who go artichoke-crazy. Spinach-artichoke dip, stuffed shrimp, and even a whole, steamed artichoke that’s served with a really good aioli – I’m up for any and all of it. That buttery, slightly nutty flavor is always just so good. Naturally, when I wanted to test out my newly acquired fryer, beer battered artichoke hearts were the first thing to pop into my head.

These light and crispy nuggets are so incredibly easy and so incredibly amazing. All you need is beer, flour, and a can or two of artichoke hearts – things that you probably already have in your pantry. And they fry up super fast so they’re a great appetizer to throw together last minute. If you’re lucky enough to find fresh artichokes in abundance definitely use those, but canned ones work just as well.

Ingredients

  • Oil, for frying
  • 1 cup flour
  • 1 cup beer
  • Salt and pepper
  • 2 14oz cans of whole artichoke hearts packed in water (about 6-10 count), drained very well and patted dry

Instructions

  1. Fill a large, heavy bottomed pot (or fryer) with enough oil to fry the artichokes in - about 2-4 inches. Heat the oil to 375 degrees. Whisk together the flour and beer in a large bowl and add salt and pepper.
  2. When the oil has reached 375, dip the dried artichoke hearts in the batter, tapping off any excess, and place in the fryer. Work in batches as to not over crowd the oil. Fry for 3-5 minutes or until the artichoke hearts are golden brown. Remove from oil and let drain. Season with salt. Continue with remaining batches.
