I’m not even going to mince words here: I am so, so excited for the upcoming three day weekend. It’s been so hectic and stressful around here lately that I feel like I haven’t even had a moment to breathe. I plan on taking full advantage of the extra day off and am already jotting down my need-to-do list. At the very top of it is to relax, of course, and spend an afternoon getting some sun and drinking one of these pineapple-watermelon cocktails.
When my dad was here, we found watermelon juice in the store and I obviously had to grab it. We both absolutely loved it and drank it all throughout the weekend. While it would be perfect for my watermelon beer (the most popular “recipe” on PH!), I found that mixing it with some pineapple juice and adding a few slices of fresh jalapenos made it into one seriously awesome drink. If you can’t find watermelon juice, it’s not a problem – just like the watermelon beer, take a few slices of watermelon and blend them until smooth, then strain the juice. It’s simple and fool-proof. If you are scared of the jalapenos being too spicy, you can leave them out, but I like the little bit of heat that they add to the drink; it’s subtle, yet keeps you coming back for more. This is the perfect drink to kick off the (almost) beginning of summer.
Ingredients
- 1 1/2 oz pineapple juice
- 1 1/2 oz watermelon juice
- 1-2 Jalapeno slices
- 1 oz vodka
Instructions
- In a cocktail shaker filled with ice, pour the pineapple juice, watermelon juice, jalapeno slices, and vodka. Muddle the ingredients to break up the jalapeno slices. Shake well. Strain into a glass with ice and top with a jalapeno slice. Serve immediately.
