Okay – so did everyone see the Budweiser commercial last night? That puppy and Clydesdale slay me every time. And I loved the cover of I’m Gonna Be – in fact, I’ve already downloaded and listened to it on my way to work this morning. I didn’t really have any ties to the game, but I watched it anyway; it was boring in the beginning but at least by second half it was more of a game. Last night I ate these tangerine beef bowls for dinner during the game with a Forbidden Traveler (seriously, I know I praise these guys so much, but their beer is amazing) and it was pretty much awesome. Since it was just me, I didn’t need to make a bunch of snacks (even though I have a fridge FULL of food right now) so I thought these bowls would be the perfect dinner.

Over the weekend I went to drop off my keys for my old place, and I have to admit, it was a little sad. My mom kept asking me when I was moving out if I was sad about packing up and leaving that apartment, and I always said I wasn’t. I was excited about moving here and the saddest part about the whole thing was that I was a little disappointed in myself for not taking advantage of the things I had right outside my door. I had PF Changs, Wolfgang’s, The Palm, Dean and Deluca, and a movie theater right below me and I just didn’t go to the places as much as I probably should have (I blame it on being by myself and not knowing anyone except co-workers – even though I know I’m absolutely fine going to dinner or a movie alone…ha!). When I went into my apartment for the last time and looked around to make sure I didn’t forget anything, I got a little teary. When I was younger, my mom or my friends and I would drive up to Charlotte to go shopping at South Park Mall. We usually stayed at the Hampton Inn at Phillips Place and I would always see the apartments above the shops and think to myself about how cool it would be to live there. Fast forward 10 years later, and I actually got to. That apartment was full of great memories (it’s where I started this blog!) and I feel lucky to have lived there. It was definitely the right time to leave – I needed a bigger kitchen and a shorter commute – but I guess there’s just something about that first apartment in a new city. I hope that when I look back on my new place I think of it just as fondly as I did my first.

Tangerine Beef

(Serves 2)

1/3 cup tangerine juice
1 Tbsp soy sauce
2 Tbsp sweet Thai chili sauce
1/2 tsp sesame oil
1 tsp sugar
2 Tbsp white wine vinegar
Salt, to taste
1/2 lb beef top sirloin, sliced thinly against the grain
Cornstarch, for dusting
Oil
1-2 large cloves of garlic, minced
1 inch piece of ginger, minced
Peel from 1-2 tangerines, sliced into thin strips
1-2 scallions, sliced on a bias
White rice, for serving

Begin by combining the ingredients for the sauce. Add the tangerine juice, soy sauce, sweet Thai chili sauce, sesame oil, sugar, and white wine vinegar to a small bowl. Whisk thoroughly so that all ingredients are combined. Season with salt if needed (I did not need salt and I used low sodium soy). Set aside.

Coat the beef lightly with cornstarch. In a medium pan, heat a thin layer of oil over high heat. Once hot, add the beef in batches, frying until crispy and golden brown on both sides. Remove and repeat with remaining beef.

In the same pan, remove all oil but 1 tablespoon. Add the garlic, ginger, and tangerine peel and cook for about 30 seconds or until fragrant. Be sure to not let the garlic burn – you may need to turn the heat down briefly. Add the tangerine and soy mixture and cook over medium high heat for about 5 minutes. The sauce will be bubbly and thicken. Add the beef back into the pan along with the scallions and cook for a minute or two, re-warming and coating the beef in the sauce.

Serve the beef, warm, over white rice. Garnish with more scallions and tangerine peel, if desired.

  1. Of course you would be sad about leaving, but it’s on to bigger and better things. I still remember my first apartment out of college, and my first solo apartment so fondly (even though both where so not glamorous and the ceiling caved in in the latter so that’s what we call selective memory). But at the same time the new place looks like a wonderful step up if your Insta pictures are anything to go on.

    Also, this beef sounds delicious. I have a ton of tangerines – more than I could ever eat or bake with. And I’m sure my husband would love to have some beef at home (which we never have because I never cook it) for once. Maybe that will be my valentine’s day gift: “here honey, have some forbidden meat”.

    1. Oh gosh, I know! I was just thinking the other day about how many places my cat (lol, I know!) has lived – she’s 7 and I think we’ve lived in 7 different places already (some better than others obviously! :)) Thank you – I really do like it, so bigger and better things, yes!

      I was the same way with all the tangerines! But I love them and I’ll probably go get another big heap of them to bake/eat. Hahahaha I actually laughed out loud to the forbidden meat comment! Thankssss! Hope you two had a great Valentine’s!
