Slimy Limey Cocktail

This is such an easy cocktail (when are they not?), but I had to post it, mainly for the “slimy” part of the cocktail. My mom and I were hashing out ideas one day and she came up with Karo syrup plus food coloring to make a drippy slime all over the glass – I knew I had to try it and it worked perfectly. The bonus is that it tastes slightly sweet when you drink from the glass, but it doesn’t interfere with the cocktail.

For the actual cocktail part, I knew I wanted to pair the “slime” with something lime-y, so when I was in Whole Foods a few weeks ago buying a duck of all things (more on that to come later), I stumbled upon this margarita mix and I wanted to give it a try. It’s not cloyingly sweet as most margarita mixes are so I really appreciated that fact, but if you were to use other mixes, the gin in this really cuts the sweetness which I love. It was supposed to be made with tequila, but I was out, so I swapped it with some gin and the results were so good. This is the perfect creepy cocktail to serve on Halloween.

Slimey Limey Gin Margaritas

2 oz gin
1 1/2-2 oz margarita mix
Juice of half of a lime
1-2 Tbsp Karo syrup
3-4 drops green food coloring

In a cocktail mixer filled with ice place the gin, margarita mix, and lime juice in and shake vigorously. Β For the slimy cocktail glass, on a small plate, mix the Karo syrup and green food coloring until well combined. Take your glass and dip the entire edge around the syrup, stand up right and it should start dripping down the glass. Pour the strained cocktail in and garnish with a wedge of lime. Serve immediately.
