Blackberry Lemonade Cocktail

Today is my 27th birthday and I’m celebrating by making a cocktail. A blackberry lemonade cocktail, that is. The other day I just wanted to make a blackberry syrup, so I went to the store, got a couple of cartons of blackberries and went to town. After I was done making the simple syrup, I took the blackberries and put them in an ice mold, filled them with lemonade and froze them. They were delicious and I knew I had to make a cocktail with not only the simple syrup, but also the ice cubes.

I decided on bourbon to add to this drink for the kick that it gives – and paired with the lemonade and the simple syrup and a topper of tonic water, it’s not jarring, it’s just the right amount. All of the flavors work so well together.

July is the month of birthdays in my family (except for my brother!) so there’s a lot to celebrate. This is the perfect drink for that – and I think, to make it even more special, you could top it with prosecco instead of tonic water. Tonight I’ll definitely be partaking in a glass or two of champagne since I’ll be in Cherokee, NC but I’ll probably make one of these this weekend to continue the celebration.

Blackberry Lemonade Cocktail

2- 6 oz containers of blackberries
3/4 cup sugar
1/2 cup water
Lemonade
1 1/2 oz bourbon
Tonic water

Begin by making the blackberry simple syrup. Take the blackberries, sugar, and water and place in a pot. Heat over medium-high heat. Bring to a boil, stirring constantly to dissolve the sugar. Once it has reached a boil, turn it down to a simmer and let cook for about 10 minutes. Turn off the heat and strain through a sieve into a clean glass jar. Let cool and store in the fridge until ready to use.

In ice molds, take the blackberries used in the simple syrup and place one or two into each cube and fill the cavities with lemonade. Freeze overnight.

To make the drink, place 3 oz of lemonade, the bourbon, and 1/2 oz of the blackberry simple syrup in a shaker filled with ice. Shake well. Strain over a glass and add 2-3 blackberry lemonade ice cubes. Top with tonic water and serve.
